Karam Podi literally means hot (chilli) powder
Podi (powder) is a trademark ingredient on the tables of any Andhra Hotel. Karam Podi, which literally means hot (chilli) powder, is not usually served. Like most podi's Karam Podi is usually mixed in hot rice with a dash of ghee and eaten as the first serving during lunch of dinner.
Karam Podi is particularly different because it is generally served to enhance the appetite! and as one can guess not generally served in restaurants!
Simple to make and is a must if you lack appetite or your taste buds are numb for a variety of reasons.
You will need (Ingredients)
- 100 gms of red chillies
- 100 gms of garlic
- Salt
- 2 table spoons of ghee
- passion for cooking!
This how I went about (Procedure)
Heat the red chillies in a tava for a couple of minutes so that the chillies are crisp and go brittle when you touch it
Remove from stove and keep it in aside. Now heat the garlic do not throw away anything (keep the outer cover and the stem etc) until they become a little brown from the outside.
Now put the crisp (fried chillies) into a mixie and grid it fine and add salt based on your judgement.
Add the garlic (now a little warm) into the mixie bowl and give the mixie a spin. It can get a little difficult to grind because garlic tend to get sticky and does not come under the blades. So give it a couple of spins and using a spoon get the powder to the center and give it a spin again. Couple of such "spoon the powder near the blade" and "spin the mixie" should see a smooth powder.
transfer the powder into tava when the ghee is giving out good aroma ... and stir it until it becomes separated and powder like.
If the powder is coarse, put it again in the mixie and give it a spin.
Lo the powder to be mixed in the rice and had with a ghee to enhance your appetite is ready.
Bon Appetite.
